Emily Cooks: Sun-dried tomato pasta
from Everyday Italian I don’t, in general, like pesto. But I love sun-dried tomatoes. So when I saw this recipe in my copy of Everyday Italian, I thought, why not? It was a good call. Oh my, friends. This is a good meal. DEFINITELY heed this note: While the pasta cooks, scoop out a good 3/4 c.-1 c. of pasta water, and use it to dilute the pesto. This will make it much more...

Simple Woman's Daybook--August 30, 2011
Outside (Panera’s) window….sun is setting, it’s a beautiful evening once again. We’ve had a really nice run of almost-fall days and nights where I can sleep with my windows open. This makes me really happy. Sadly it will get warmer on W-Th-F. I’m ready for fall. I am thinking…that I’m really irritated that my internet was cut off 10 days before my move....

Gah....
Because my internet provider is dumb, my internet was accidentally disconnected many days before my move. I won’t get it back till Friday. Until then I have VERY limited internet, which will mostly be reserved for post-work blog fests at Panera or on my lunch break at wifi locations around Columbus. This makes me really irritable. Very irritable. The plus side is I got $100 for all the...

Updates and such
A few news and notes from the beautiful calmness that is central Ohio today. Prayers to all my friends/relatives on the east coast—there’s quite a few of them—and I hope you are all staying safe! I’m also thinking about the OBX, which is one of the most gorgeous places ever, and I hope everyone there is OK. :( I want to come visit you next summer! In the world of my...

Emily Cooks: Roasting tomatoes for cold storage
I’m using this recipe. Once they’re done, they’ll go in the freezer for an hour to chill and then into baggies. I only did six this time. Pics once they’re out.

Bountiful summer
Late summer provides an absolute bounty of local food in central Ohio, especially with the good growing season we’ve had (it was scary in the beginning, with all the rain, but the heat and occasional rain has helped here). The local farmers’ markets are just overflowing with beautiful produce. In a nod to “get while the getting’s good”, I’ve been stocking up on...

Emily Cooks: Shrimp fra Diavolo
from Giada de Laurentiis’ Everyday Italian I love cooking with shrimp. It’s fast and easy and always good! Today’s edition to my shrimp repertoire: Shrimp fra Diavolo (essentially, “Devil shrimp.”) It’s hot, spicy, and fast! Try it soon! 1 lb. large (jumbo) shrimp, peeled and deveined 1 tsp. salt, plus more to taste 1 tsp. dried crushed red pepper...

Sleeping Beauty
(or…not….) Yeah, looking like that would’ve made for a better night last night. Because it was sleep study night! Now, I’ve slept in a lot of hospitals in my life, and this was a lot like that, except marginally more uncomfortable, due to the stuff I was attached to all night. And there were no nurses coming in and taking vitals, so it probably all evened out,...

Emily Cooks: Shore-Roasted Tomatoes and...
Stay with me here. Tomatoes? And blueberries? Are you kidding me? No. These are so, so good. They are especially good if, like me, you have access to local tomatoes. The SMELL of the tomatoes alone made me want to eat them like apples, roasting be damned. But I am also pretty sure that the fresh wonderfulness of them added to the luscious end result. Here is the recipe. Really, the Old Bay is...

Blood drive
So today I had a blood draw avec the port. There’s really nothing better in life than starting your day with the taste of saline in your mouth. (Severe. Sarcasm. Here.) Anyway, we’re checking my prograf level to make sure it’s doing OK on the 1 mg AM and 0.5 mg PM cocktail we’ve got going on now. And we want to check some vitamin levels again, just for fun....

Weekend Rewind XII
Technically my weekend is still going (took tomorrow off so I could go to BR. H’s simple profession), but here’s some of it. Sat.: Clips, then had lunch w/ my sister at O’Charley’s, which was a good time. Saw some friends of the family and had a bit of a chat before we left. Then I went home to pack more for Cincy, and watched Beauty and the Beast before Mass at 5:00....

Emily's Summer Road Adventures Part I
So, today I did something cool—I began my own road trip. OK, yes, Cincinnati from where I live ain’t much of a road trip, but it’s something I’ve always wanted to do. To be more specific: I’ve always wanted to travel somewhere, stay in a hotel by myself, and generally enjoy it. I’ve never done this. Sure, I’ve flown alone, etc., but that was always with...

Seven Quick Takes Friday--Vol. XI
I. Well this has been sort of an up-and-down week. Monday was my annual testing day, which lead to some angst. Some of this is being resolved—we’re playing with different meds, to see if that helps with the fatigue aspect of things. I’m hoping it does, although I think I’ve come tot he conclusion that all statins have fairly awful side effects. I’m hoping the new one...

Head, meet wall
OK, normally, I don’t rant about my body in public. I am used to it doing weird things after 28 years and I just sort of take it in stride.  But I have reached the end of my “endurance of pointless testing” rope, so it’s time to rant. For most of my life I have been a very good patient. I do what people tell me to do, even if I think it’s sort of dumb. Well, I dunno,...

The Simple Woman's Daybook--August 8, 2011
Feast of St. Dominic Outside my window…sunny, breezy and warm. It’s actually pretty nice. :) In the CD player…CD I made of Josh’s concert set; on the home CD player, The Woman In White. Totally underrated musical. The score is beautiful. I am wearing…a gray heather skirt, and a coral tank top. I am grateful for…childhood memories. I am reading…The...

This is who I spent Friday night with: OK, in case you can’t tell (because I was sitting sort of far and couldn’t zoom in close enough), that’s Josh Groban. Yeah I went to his concert. It was fantastic. Euphoric. Really awesome. The set list was essentially “Emily’s favorite Josh songs”. (Except for one, but that’s OK!) It was a pretty awesome way...
